let's cook up something

went to the night market near home yester-eve
by the time i reached home, it was nearly 8pm
i was hungry *lol*
didnt have rice the day before
and rice, being my staple food, i'm not surprised
then again, it was already pretty late, so i couldnt make chicken rice like i planned earlier
so i stirred up a simple dish instead
garlic butter rice with stir-fried chicken & potatoes in oyster sauce
quite a mouthful aye?
proved out later, it was literally & figuratively speaking

anyways~care to try out?

for the rice
1½ pot plain white rice-washed & drained (i added mine with a spoonful of purple rice my sister gor from the villagers where she works)

1 clove garlic (crushed & diced)

1 tbsp butter

cooking it is easy
simply melt the butter in a wok, brown the garlic, then quickly stir fry the rice for say, 2mins
pour into the rice cooker, adjust your water level and leave to cook
sprinkle some fresh parsley too, if available
the rice will cook smelling yummie~

for the chicken
cooking oil
2 cloves garlic-crushed
2 bulbs red onion-thinly sliced (i'd have gone for the yellow onions, but i havent re-stock my pantry. if you do have, roughly chopped half an onion would do just nice)
1 inch ginger, sliced (more, if you prefer)
1 whole chicken keel, cut in strips the size of french fries (for fast cooking)
4 tbsp oyster sauce
2 tbsp tomato sauce
1 tsp sugar

1 tsp chilli flakes (or you can use cut dried chillies-make sure you soak 'em in hot water beforehand)

a pinch of crushed black pepper (i prefer more coz i love the hotness of black pepper)

2 small potatoes, skinned & sliced

again, chopped parsley (optional)

firstly, fry the potatoes until golden. drain & set aside
using the same oil, leave just enough for stir-frying the chicken.
best to put your flame on high. this is, a stir fry recipe after all, and what is a stir fry without high flame?
brown the garlic, onions & ginger
add in the chicken
pour in remainder ingredients & stir-fry to perfection *lol*
when just cooked, include the fried potatoes to the wok & stir to mix & coat with the sauces.
garnish with parsley

yummie~
